Achappam (Rose cookies). Also known as Rose Kokki or Rose Cookies, Achappam is a traditional snack of Tamil Nadu. It may look complicated but this traditional Achappam recipe makes it effortless to make at home! This South Indian Achappam recipe is prepared using rice flour, coconut milk, eggs, vanilla essence and sugar. It is very delicate but crunchy & delicious. Remove the mold and carefully take out the achappam from oil using a perforated ladle.

  1. It's 3/4 cup of fine rice flour (Appam powder).
  2. You need 3/4 cup of maida.
  3. You need 1/4 cup of sugar.

  5. Prepare 2 tablespoons of black sesame seeds.
  6. It's 1/2 teaspoon of cardamom powder.
  7. It's 1 pinch of salt.

Achappam is a traditional South Indian snack. It is very popular among the Christian families and is often made during the Christmas season. Achappam looks very similar to the Scandinavian rosette cookies. Achappam is made using an iron mould which is available in different designs, but looks very much similar to a flower drawn by a kid.

Achappam (Rose cookies) instructions

  1. Beat the eggs in a large bowl..
  2. Add the rice flour, maida, sugar and salt to the beaten eggs. Mix well..
  3. Using enough water, make a batter. It should be of dosa/pancake batter consistency. Keep aside for 30 minutes. Add cardamom powder and sesame seeds..
  4. Heat oil. Keep the mould in the oil till it heats up..
  5. Once the oil has heated, reduce the flame to medium..
  6. Remove the mould from oil and dip it in the batter upto 3/4 it's height. Place it back in the oil. This needs a bit of practice..
  7. The batter will not stick to the mould if it is not hot enough..
  8. Gently loosen the achappam from the mould. Fry till the oil almost stops bubbling..
  9. Drain it on kitchen towel. Achappam will be soft when fresh. It will become crunchy as it cools down..
  10. Store in an airtight container..

When I was a kid, I used to wear each ring of achappam. So this time, I made Achappam for this Christmas season. I dont know why, but for sometime, I had it in my mind to make Achappams this Christmas instead of regular cookies.
