- Prepare 200 gm of Plain Flour.
- It's 110 gm of Unsalted Butter.
- It's 120 gm of Light Brown Sugar.
- It's 50 gm of Granulated Sugar.
- You need 100 gm of Chocolate Chips(To be incorporated in the batter).
- Prepare 2 of large eggs.
- Prepare 1 tsp of Vanilla Extract.
- It's 1 tsp of baking soda.
- Prepare 1/2 tsp of Salt.
- Prepare 1 tsp of Corn Starch.
- You need of Decoration.
- Prepare As needed of Whipping Cream.
- Prepare 5 tbsp of Icing Sugar.
- Prepare 1 tsp of Vanilla essence.
- It's as needed of Food colour Pink and Green.
Watermelon Cookie Pie step by step
- Mix all the ingredients together one, after the other, after sieving the all-purpose flour and beating the eggs separately.Please note that I did not add the flour in batches but added everything together..
- Butter to be maintained at Room temperature before incorporating to the mixture..
- Pre heat the oven at 165 degrees Celsius and bake for 15-20 minutes/ Until done. Please note that as this is a cookie Pie/ it will not be soft as cake/ neither hard as Biscuits..:).
- Divide the whipping cream in portions adding the food color and decorate the same to look like a Watermelon. I did not use any nozzles and went with very basic decoration techniques. Garnish with choco chips. This can be served as is, along with a scoop of ice cream.
