- It's 100 g of Self-Raising Flour.
- You need 3 Tbsp of Vegan Butter.
- Prepare 4 Tbsp of Caster Sugar.
- You need 3 Tbsp of Oats.
- Prepare of Zest and Juice of 1 Lemon.
- It's 2 Tbsp of Oat Milk.
One of these cookies makes for a delicious oaty, buttery, lightly sweet, lemony treat. I think they are quite fabulous actually and I will be putting them into my regular rotation! Crisp cookies with a delicate lemon flavour that are quick and easy to make and very diabetic friendly. These buttery biscuits are incredibly delicious, crunchy and oh-so-moreish.

- Cream the Softened Butter together with the sugar. Leave out 1 tablespoon of the sugar and place in a small ramekin. Add the lemon zest and juice. Pre-heat the oven at 160 degrees and line 2 baking trays..
- Add the flour and oats, leave 1 tablespoon of the oats and place in a separate ramekin. Mix, then add the oat milk, tablespoon at a time to make a soft dough (you might need to add more or less oat milk.).
- Roll the dough into balls, then roll each ball in the sugar and oats, making sure they are well coated. Place the biscuit balls on the baking trays. Bake for about 20 mins and enjoy!.
