  2. It's Tsp of almond extract.
  3. It's 250 g of caster sugar.
  4. You need 125 g of soft brown sugar.
  5. Prepare 1 of egg.
  6. You need of Pot of glace cherries.
  7. Prepare 100 g of ground almonds.
  8. You need 50 g of marzipan.
  9. It's 150 g of self raising flour.
  10. Prepare Handful of flaked almonds.
  11. Prepare 125 g of icing sugar.

Bakewell Cookies instructions

  1. Cream together the almond extract, butter and both sugars in a large bowl.
  2. Add the egg and mix well..
  3. Pour the whole pot of glace cherries into a small bowl and cut them up smaller with a knife..
  4. Add into the bowl the flour and ground almonds along with the chopped cherries.
  5. Grate the marzipan over the top to add some extra almond flavour!.
  6. Preheat the oven to gas mark 2/ 150C. Line two large baking trays with greaseproof paper..
  7. Mix everything together with your hands until you make a dough. This is one to roll your sleeves up for!.
  8. Roll the dough into small balls around the size of a golf ball and place onto a baking tray.
  9. Using the back of your hand push them down to flatten slightly.
  10. Sprinkle a few flaked almonds onto each biscuit.
  11. Bake in the oven for 30-35 minutes. You may need to rotate halfway to ensure equal cooking!.
  12. Wait until the biscuits have cooled slightly to make the icing. Then mix together 125g of icing sugar with another splash of almond extract and then enough water to make it into a smooth icing consistency..

I love the thriftiness of it. Very similar in texture and cooking method to my Sunshine Cookies recipe - The joy is in the eating and how quick these cookies come together. Be warned, this is a very sticky mixture. With fork, poke holes all over crust. Along with my almond extract the idea hit me.
