Rolo cookie cake instructions
- Put the flour, caster sugar, butter & egg in to a bowl..
- Then add the bicarbonate soda, then the chocolate chips..
- Mix together and form a flat cookie dough in the mixing bowl.Then using a ice cream scoop, equally put in to the Yorkshire pudding tin..
- Then press with your fingers to mould the cookie dough in the tin..
- Then you will need 6 packets of rolos, place 3 in to the cookie dough moulds..
- Then with the remaining cookie dough, get yourself a round cutter (I used a drink glass) and make the tops and place them on..

- Put them in a pre heated oven at 170•C for 20mins..
- Then once cooled after 3-4 mins get them out. You can have them with ice cream & caramel sauce or just on their own..
Remove from oven and immediately place Rolo pieces, cut side down, over hot crust. Drop remaining cake mix mixture by teaspoonfuls over Rolo pieces. I got this recipe from my neighbour Bonnie who brought them to a cookie exchange. Needless to say they were a big hit with the kids (big and small). Having the Rolo in the center gives it a wonderful surprise when biting into it.
