Ingredients of Shortbread Cookpad Forest

  1. It's 180 g of marg or butter, room temp.
  2. It's 80 g of icing sugar.
  3. It's 70 g of corn starch.
  4. It's 270 g of Plain flour.
  5. You need of Icing sugar.
  6. It's of Milk.
  7. You need of Food colouring (optional).

I wanted to come up with something a little bit more festive than just your ordinary shortbread so played around and came up with this. It's basically just my standard shortbread recipe but with the addition of cinnamon and dried cranberries. Essentially this recipe follows the rules of millionaire's shortbread in that it has a base, a layer of caramel and is topped with chocolate. However, mine has a base of rum flavoured sultana flapjack.

Shortbread Cookpad Forest step by step

  1. Cream the butter so that it is nice and soft..
  2. Add the icing sugar and cream together with the butter..
  3. Mix together the flour and cornflour in a separate bowl then slowly incorporate into your butter. Beating a bit at a time..
  4. Bring you dough together by hand and place on a lightly floured surface. The dough is dry and will crack a bit, use your hands to keep it together if needed. Roll out and cut your shapes..
  5. Bake for 7-10 mins depending on the size of your cookies. Don’t allow them to brown. Cool..
  6. Put icing sugar in a bowl and add a teaspoon of milk at a time to make the icing. Ice your cookies then eat!!.
